Age? Level? Not coming to practice and still playing in games?
A lot of kids are playing two teams if they can - so something has to give on the practice front.

depending on the level of the club, you have to see if they make the kid commit to soccer being their top choice. Some kids play multiple sports, and some clubs let them skip practices for the others. I know my club basically has a rule that you can play other sports, but soccer has to be #1. Unless of course you are really good, or a goalie, or if we are short players for the season, or ...
bothers me too
of the 13 kids on our team (9v9), 8 ONLY do soccer (besides school thinks like band and such).

3 do "off season" sports (like hockey or basketball), but 2 do baseball and/or lacrosse and it conflicts a lot with practice AND games

Missing is more common at the younger ages, lower levels where kids are more likely to be playing different sports. At the higher levels and as they get older, then a commitment is expected. If a coach doesn't stress this at tryouts/contract time and doesn't punish players for missing, then that's on them. Find a team that has families and a coach that match your preferred level of commitment.
