Ok, "guarantee" might be too strong. But it's all about probabilities, right? If the coach says "I'm very certain your kid will be back", he's pretty much saying that he doubts that there will be 12 new kids coming the next year that would displace your kid on the roster. If he says "I can't be certain your kid will be back", it probably means he thinks there might be 5-6 new kids that could displace your kid on the roster.

I think that's a fair statement, but also comes down to how realistic you are about your own kid as well as the current state of the team. There are a ton of parents out there that think their kid is in the top third of the team, but the reality is their kid isn't close. Also, it might be a transition year (field size or going into HS when more aggregation occurs) so there might be more kids coming in. Lastly, there are a bunch of coaches who may say the former but really mean the later. It's a pay check for them as well as making sure competitors don't get better kids. I can't see talking to the coach as I've seen even the best of circumstances turn sour when kids are perceived as abandoning their current team.

Of course, but I think it's easier than telling them beforehand. I just don't think there are many coaches who are accepting of this, especially at older ages and with more competitive teams.
