Saw offside call on a corner kick in HS this week.
The kids know the rule, pleaded their case but the ref was incredulous.
Offside sign made was the American football sign.

Unless you are specific about exactly what call was made it is hard to tell if ref was in error. But your blanket description that the call was wrong may not be the case.

The team in question had a player make a PK because of a foul by the defense inside the 18. The ball hit the top crossbar, bounced off and the same player headed it in. No other players touched the ball. The goal did not count.
Some parents from that player's teams spent the next 30 mins swearing up and down the sideline. The parents seemed to think the ref called it no goal because the ref was saying the ball was dead, after it hit the goal. Which was not his reasoning. He tried to explain the rule to the parents but there was one guy that would not calm down. It was extremely unbecoming.
Perhaps clubs should issue parents a rule book when they sign their kids up for soccer.

There is no offside on a corner kick. There is offside as a result from a pass, which you describe above for the play above.
The signal for an offside offense is a single raised arm and whistle. The arm indicates an indirect kick and the arm is lowered when the ball is put in play and touched by another player.

There is no formal signal for offside.
As for the previous question. It is no goal because the player taking the PK (or any IDK or DK for that matter) cannot retouch the ball after first touch until another player touches the ball.
