Do most clubs use these sessions to make offers for their ECNL and ECRL teams? I don't see there are separate tryouts for ECRL players.

They are just for show. There is practically no chance of getting on an ECNL team as they are pretty much locked in. Clubs are just referring players to regional teams from what I have heard.

most players are eitehr recruited or find their way to ECNL teams by reaching out and practicing with the teams. ID sessions may help find a random gem but when it comes to that level, there's very few players who the coahcing staffs do not know already.

If your player already got "recruited" (not supposed to happen yet) or already contacted/practiced with the team and got an offer, you don't need to go to a session.
If you have a player who wants to see where they're at but didn't already contact/practice with the team, then you should consider going to a session.

Dog and pony shows - just go and observe how they are run and it is obvious.
3-4 coaches in the middle of half a dozen fields or more. Kids trying out randomly thrown together with no concept of perceived level or skill set - proven ECNL mixed with proven ECRL mixed with kids off the streets.
Plus most telling observe who is not there, kids that are locks. Wouldn’t coaches benefit from testing new players against proven top players, of course if it’s a true gauge of talent?!?
Nope it’s all for show. Skip and reach out to club directly and attend practices
