It's pretty easy to determine whether or not kids are being taught the right things. If you watch a team play a few times, it should become obvious if the coach is teaching them to make good decisions and play good soccer. Some people are blind and only see wins/losses, but the style of play should be the biggest indicator in determining the quality of training.

It's also pretty easy if you listen to what the coach is saying. If he/she is cheering for players who aimlessly kick the ball as far as they can, it's safe to say the coach has no idea what he/she is doing

How a team warms up before a game can tell a lot about how the team is coached during the week. If the team jogs around the field and then stands in line for a shooting drill, then you can expect that not a lot is happening during weekday practices.
