Are tryouts a fair way to assess kids abilities?

No they're not, even more so if they're large and there's an insufficient number of evaluators. Some kids can standout in tryouts because they're faster or bigger or just have a really good day. If you want your kid to really try out for a team then you should get them to some team practices. That's a better way to evaluate their skills and fit with a team. But clubs still run them and sometimes it's the only way your player can tryout.

+1 on attending practices. better for your sanity (does your kid mesh well) and better for the team (evaluate new vs current directly).

Spot on. Most clubs will let your kid practice for a few sessions to see what kind of fit they are. At the end they'll give you feedback which might be that the kid needs more work, or they may tell you to show up at tryouts. If they tell you they really like you and come to tryouts, that pretty much means you're in.

They only have value if it’s a brand new group of kids. Better to just give feedback throughout the year. Most tryouts coaches have 90% already selected as they know the kids.
