It differs from school to school. Tryouts for a varsity soccer team are like any other tryout process though. The coach will already have a good idea about the kids who were there last season, and who may have been turning up for off-season conditioning.
Like a club tryout, the questions will be (a) anyone new show up? That can happen at a school too as you can get transfers, exchange students and possibly good freshmen (b) any major holes to fill? If a team lacks an experienced keeper a tryout can be like an open casting call, and (c) what to do with the kids on the bubble.
The starters were on the team before the tryout begin. If the coach is going to take 18 - 20 on varsity then he/she has to make a call on the 7-9 kids who will be coming off the bench. That is not easy by the way, and different schools/coaches will have different policies about what to do with say the senior who will see very little time, and the junior who is really not going to make varsity next year either. No one likes to cut kids.
Conditioning, by the way, is not a bad thing. Does your kid want to play college soccer? Spend a few minutes on google to see what college coaches hand out to kids for their summer conditioning programs. The stuff high school teams do is paddycakes in comparison. Because high school sport rules limit what a coach can do with a team in the off-season, supervising conditioning does allow a coach to get to know their players and vice versa. It can also give a coach some measurables to use when making a decision on whether to cut or keep a kid on the bubble.
Again, the level of play and level of coaching will differ from school to school. Even if neither is very good, let your kid enjoy the experience. Do not be "that dad" who talks about why club soccer is better. You will be hurting your kid. It will get back to your kid, and they will not appreciate it.
