Cannot count out Mountainside. They were a good team WITHOUT any seniors (due to the function of the school only being 2 years old)--they have to be listed as contenders.
Sherwood/Tualatin/West Linn/Sunset should all be considered too. Sunset had 5-6 seniors but they were NOT difference makers. Their strongest class is their junior class. The Metro league will be a 3 team race between Sunset/Mountainside and Jesuit. Cannot EVER count out Jesuit. They just seem to rebuild, year after year.
But, a good starting list. These teams will all make noise and should all be in the playoffs next year too.

Ben's state playoff record is about as good as any HS coach in Oregon who has not coached at Jesuit. He consistently takes his team deep into the playoffs.
The Metro League is the toughest conference in the state. The conference consistently puts 2 teams into the state semifinals every year.
Only one coach can win state at the end of the year. How many coaches can say they have taken their team to as many semifinals and finals as Ben.
I don't love Ben, but lets be fair.

They lost by a penalty kick to Moutainside in the quarterfinals.
Not sure what you mean by all the talent leaves. They return almost all of their impact players from this year's team.
I guess the story fits your narrative better if you say all the talent leaves and he leaves.
