Athlete: a person who is trained or skilled in exercises, sports, or games requiring physical strength, agility, OR stamina.
An athlete suited for one sport could be very poorly suited to another. Watch the front runners in the Boston Marathon in person. Their smaller stature and crazy speed many miles into the race will impress. I don't think a Tom Brady could successfully compete with that any more than "Meb" Keflezigh ( 5 ft 5 in and 126 pounds!) could help win a Superbowl.

QB is the most well-paid and long-lived positions on the field. Most status as well. If you could pick any starting position on the field, that's the one you would take. Your definition of athleticism is much too narrow. The athleticism of a QB is much closer to the athleticism of a soccer player than any other position on the field. Vision, processing power and ability to execute technically. Sound familiar?

You can look at college quarterbacks to see the best athletes but when it comes to pros you have to look at intangibles.
There are simply too many absolute physical specimens out there selling shoes and sweeping hospital corridors for people to not realize that the brain is first and foremost. How many bad brains make it in the pros for long stretches (and I'm not just talking about their off-the-field antics artificially shortening their careers, which also happens plenty)? We're not talking SATs here - we're talking raw processing power for estimation in space, proprioception, environmental input and decision speed. Pure athletic mental horsepower.
